I guess in some days we have the white/black option back again. The option is "greyed out", it is not taken away completely.
So, maybe a change in code is planned, to avoid players from the "quick pairings"-lobby not getting players from the who want to play a certain colour and made a challenge offer in the "Lobby"-lobby.
I dont think the code is difficult to implement, but maybe they want to test it for 1 week or so, before releasing it.
If no code is planned - well, maybe someone will help and change the code?
I dont like the demonization of "white-only players", they are no abusers. But its not ok if players from the quick pairings do not have a say if they are willing to play others who do want to play white.
The arguement that every Code addition is a risk - yes true. But lichess handled it in the past, they can handle it in the future, too.
Imagine we had the bare bones of lichess, only the minimum. That would reduce a lot of bug-potential. Of better, [sarkasm on] delete lichess completly? If there is no lichess, then there is no bug and issue! [sarkasm off]

Maybe it is greyed out because on some settings you can still use this feature.

You could do it yourself, from what I gather from your messages it should be a few hours or work at most.

There were abusers, but fortunately that has been taken care of

Not a risk per se, but it adds UI clutter, and cost for upkeep and compatibility. The addition of the feature needs to weigh against that. Maybe it's just not worth it
