'Mashed Potato Pancakes'... like my Mom used to make. - :]

1. Boil fresh potato's, mash (add salt), and place in refrigerator to chill.
   2 . Form potato's into thick patties, dip them into egg batter and then bread crumbs.
2. Fry patties in Crisco or olive oil until golden brown.
3. I liked mine with butter and fresh ground black pepper. - (Yummy)

P.S. There was a popular dance in 1962, called the 'Mashed Potato' Chubby Checker had a song about it. - :]
Is it okay to spell potato with an 'E' 'Potatoe' - I recall in the past, seeing potatoe on the burlap sacks they came in. I also recall the former Vice President Dan Quayle, spelling it as potatoe and it created some controversy at the time.
