You are 1000. You can use ANY oppening. Colle for white, modern deffence for black.

I don't want to be rude, but "for intermediate levels like me" is quite a bit of a contradiction, and might guide your choices in the wrong way.
At 1000 blitz rating, go with the basic principles. Make good moves that you understand. Fight for the center, develop your pieces, castle.
There are no specific "beginner openings", but on the other hand some are obviously very tricky. Go with with something that honors the mentioned principles, to start your chess career on the right foot. Like Italian, Ruy Lopez, Scotch, Vienna.... You will get structures that you have a chance to understand.
