Variants? Time Control? 0 plus one? I have no idea what all these things are - is there a FAQ that covers these subjects? Thanks in advance! James
Variants are different types of chess. You can change the time control by clicking the create a game button and moving the bar under time. You can choose different variants by clicking the create a game button and clicking the first down arrow.

It is easy. Trial and error or guess and check.
When you are using any chess websites, when you use it enough times you will learn how to use it.
