I'd advice you to just avoid it and to play Nc3 instead of taking the pawn.
If you really insist on playing it for white, then you just have to know the theory, because due to characters like Eric Rosen your opponent certainly will know it.
From which side? I have some prep from white side, but no prep from black as I play Caro-Kann

As a general rule, you shouldn't accept a gambit if you don't know how to beat any trick your opponent can shove on you with it. The stafford is super complex and you would need to know a lot of it as Rosen has spread almost every line of the Stafford to the world. I would follow the advice of @jesgluckner and just not accept it, I'm a bit too lazy to learn all those lines for an oppening. Or even better, just be a d4 player, it's a simple trick that avoids the Stafford completely.
To elaborate on @Dugbug #6 for example play like this:

@selfbrain exactly, now you're the one playing aggressively, and you can just keep pushing pawns and enjoy a material advantage, a very strong space advantage, and a nice tempo lead
