How can a Knight be pinned and attack at the same time?

In club level blitz games, when the opponent misses a check, sometimes I simply make a move on the other side of the board (a capture is usually very effective), and announce "check". Or give a second check from a different direction. I think in Blitz it might even be legal to do that.
