I play e4 exclusively as white and have pretty good stats against the Scandi. I know that it’s not a very theory heavy opening but apart from that what’s the appeal of playing it?

Blitz means less time so a simple, not theory heavy opening seems attractive.

Many people like to play ...1d5 on e4 because they get their queen out and very agressive with Bg4,0-0-0. It's very good at bullet

Because it can be both solid and aggressive depending on Black. And the 0.8 advantage that Stockfish says white has is not felt at lower levels. Also after 1...d5, white pretty much has to take the pawn or have a bad position, so if you can limit your opponent's options at move two, it means that you can prepare for them more easily.

In bullet games the appeal seems to be, that often people premove 2. Nf3, there are some easy-to-remember traps early on, but I think the main reason for 1. .. d5, at least at lower levels, is that Black tries to play as White and be the one putting pressure with 0-0-0 and quick pawn pushes on the kingside. This can easily happen if White tries to play normal and is too slow, and then Black is often having the time-advantage. I often play against it and this usually seems to be the strategy. That being said, if White attacks quickly enough and doesn't fall for cheap threats, at lower levels Scandi is not a good choice for Black.
