Stockfish 13 is way higher rated (3200-3500) than GMs.

It's stockfish (fairy) LEVEL 8, not stockfish 8.

I don't think people would like it...I guess titled player may like them but ordinary players may not..after all, let's first beat Stockfish Level 8!

I made a thread few months back regarding the same as I wanted to research for an endgame that never comes in reality though as it was case based.
I am very eager to play against the AI Stockfish level 13.

You're already playing against it, its stockfish 13 LEVEL 8, not stockfish 8 (actually its stockfish 14 now)
