why many players are not polite ?

Because they know were the opponents finger were before touching the pieces.

They want to be polite but its impossible

If you are playing a shorter time control, most will not take the time to say "hello" or "good luck" because there simply isn't much time for such things, and doing so could cost them the game on time. Of course, the clock does not begin counting down until the second move, so the players would get a chance to greet each other, but I think most do not realize this or use that time to chat, especially since there is a separate countdown that will auto-abort if it reaches zero and create trouble for the player by means of eventually giving a temporary ban from chess. Others may simply not want to respond and just want to play a game against their opponent. This is what I find to be true, but I am not all-knowing, so there are likely many falsities within my response. Please feel free to correct me if I am wrong or add more reasons if you have them.
Tbh I mostly use zen mode to reduce rating anxiety and many people do the same so they don't even see your messages. I do usually say gg tho
