I have never been rated 2100 in my life. I haven't been studying - nothing. And it doesn't seem like my opponents are playing at 2000 level either - has there been a general ratings inflation recently?

You have only played a few games so far on Lichess. Play more to narrow down your rating.

Covid pandemic is the main cause, because people with high rating get ill and start to play badly, losing hundreds of points. That's a chain reaction.

Well, first or all, you haven't played that many games - 17 games aren't all that much, thus your rating isn't that stable. It will be stable, when you have played some more games.
But: You are higher rated here on lichess as you are OTB, because Lichess does not use the ELO-rating, rather it uses the Glicko2-rating.
And, as mentioned before, the pandemic has brought many new players to chess and lichess - and new players as well as players who haven't played in a while and never played OTB to begin with, usually play moves, that seem more random and inaccurate. This gives more experienced and advanced players the opportunities, to get a superior and eventually a winning position - and those positions often lead to a win. Thus, a player, who was a completely beginner over a year ago or so now can be an advanced player, beating other players. Actually, I think @ TheKingClash explained the infaltion-problem a lot better.
Anyways, regarding your question, I also am astonished that I have reached like 2222 imaginary points - though I am not going to complain about it!
Last but not least, we play chess to improve, to learn, to have a fun time. Not to get a certain amount of - basically worthless - imaginary point that show, how good you have been at beating your recent Opponents - rating isn't necessarily equal to your actual "chess ability".

Play 2000 games then come back and ask the same question

Just keeps going up...
it seems like you have come another site, either chess24 or chess.com, where ratings are usually 300-400 points lower, since they use a different rating system, so if you are 1800 here, you would be 1400-1500ish chess.com.
