I want to practice openings by playing vs the best engines and trying to get as far as possible, but on Lichess even the best stockfish level makes ridiculous blunders.

I don't think that is running a full stockfish 14 at all. Did you beat it though?
It would've still beaten you. Playing with you!! Lol
On those weaker levels it will not play best moves in the opening, but in the middlegame it will outplay you. Then you will have a bit of chances in the endgame again. But basically it's like #4 wrote.

It's just statistics - if you start dozens of unrated games and try it out, you sooner or later will have a hit.

I can't select stockfish 14 on mobile at least, I will try it in browser. I am not looking to beat it, I don't play stockfish to win, I play it to find my mistakes as quickly as possible. Basically as an automated teacher. For that I obviously want it to play the best move every time. I think the best I can hope for is to draw against it, because ultimately I think that is the best you can get with perfect play of both sides.
