I'm not really good at analyzing players and games, so I would like to ask the veterans out there. What kind of player is Ding Liren? What is his playstyle? What openings does he play?
I got curious after I found some videos of him being interviewed. I found that he seems to be a humble and nice guy and after his performances against Magnus Carlsen and other top grandmasters, I got interested.

I'd say he is more a positional player. With white often Catalan.

#2 i've seen a few games, and this is why i mentioned that i'm not good at analyzing games and players, i don't exactly see what kind of player he is. What makes him better than other grandmasters? People describe Levon and Hikaru as tricky, and Karjakin as defensive. So what is Ding Liren, what would describe his chess playstyle?

That did answer one of my questions, but I have still yet to find what kind of player he is.
Ding Liren is an excellent calculator (arguably the best calculator in the world right now), and can also demonstrate engine-like precision in the endgames. But yeah, mostly he is known for his superb calculation skills.
