In many years of playing chess online I've never had anyone add time to my clock out of kindness, neither in rated play or unrated play. They only do it when you've dropped your queen or mate is coming. I resign in those situations, even with almost no time left, but sometimes I'm slow to react and my clock runs out. Then, some players give more time so they can mate you or force you to resign, and that makes it nothing except an insult. Some will even give as much as half an hour to rub in that you're losing. They want to humiliate you.
I like anonymous play because the average strength of anonymous bullet players is higher than I get paired with at my rating, and the variety of openings is different, but a lot of players abuse the give more time button. I think it should be removed from anonymous play.

The give-time tool can be extremely useful if you have a kind opponent. For instance, if you say "hey my mom is calling me brb" and they give you 30 seconds, that is a good use of the tool. When you are playing against a weaker friend that needs to think more it can also be helpful. It shouldn't be removed from anonymous because it is a useful part of the website.

You can actually go against higher rated bullet players without going anonymous. Click "create game", then make the slider for rating only include higher rated players. This does allow players with a similar rating to play (i.e. a rating 3 higher than yours) but also allows players with much higher ratings to play whilst denying any lower rated player
