As a Coach, can I create multiple accounts for my students, without having their email addresses, so that I could just provide them with Usernames and Passwords?

Yes. You can create accounts for students as you like, within the Lichess class system.

Sometimes students forget or lose their account info, so you can create second accounts for them.

But the same rules apply to students as to everyone else about having multiple accounts (i.e. if you play one account off another you can get banned.)
