I think people who do not resign in a lost position (remembering that I play 1900+ players, are not silly and know how to play chess) concludes that you are weak enough to they reverse the position.
This happens on all levels. Carlsen would insist on playing against ourselves with a queen down without any compensation. But he would resign IMMEDIATELY if his opponent is a 2800+. To be honest, they resign many moves before losing the queen ;). In Speed Chess Championship We see players resigning WITHOUT win on time ;) <-- respect!
With this, it is obvious that there is a certain disrespect, the opponent is saying: you are weak, I do not give any value to you, so I must continue.
Now about the rematch, we all know that this is a matter of education. Chess is much more than a sport, the players (those respectful) are interested in proving that they are the best players, so they create matches where it takes at least 12 games between the players giving the opponent chances to recover from a bad game. This was so much more evident in the early 20th century that even after the 12-games match the loser had the option of asking for a new match.
What's the idea? the idea is to be COMPLETELY convinced that you are superior (or inferior) to your opponent. A match like Carlsen x Karjakin does not convince anyone that Carlsen is better than Karjakin in long time controll matches.
To further analyze this idea, realize that players with a high rating (above 2700) 'will always' play a match, at least 3 games. They know it would be disrespectful to play only one game.
But 1800 ~ 2200 players are looking to score points and winning is the only goal. And they use the hit and run strategy.
It is to divert the subject to say that the player has no time to play anymore because he will immediately play another game against another opponent ;).

Anyway, I think some feelings about that is because the opponent idea: I'm a WEAK player is correct! And a mix of 'I'm not weak, I can win that guy in more two or three games' and 'damm! he is right, i'm is too weak to win in next 10 games, no rematch make sense' make me very sad! BUT, one part on my SAD is disrespect from my opponent, the other, is my own psychologycal problems lol <-- may final conclusion
I get a lot out of it because of my style of play. When I play against players of high rating I become more attentive and leave them with a game difficult enough for them to feel that of every 3 matches they play with me will lose at least 1 and it is a bad deal!
