I suspect most players who resign one move before a checkmate don't do it out of spite (to deny their opponent the satisfaction) but rather out of fear they would look like a fool who didn't see the checkmate coming.
As others said, it's perfectly fine to resign at any point or not to resign at all, the decision is completely up to you. On the other hand, if you want to be polite, I would rather suggest to either resign earlier (unless the checkmate is a result of a quick and unexpected blow) or let your opponent to play the checkmate.

In online chess, in the faster time formats (Blitz and Rapid):
If you wish to play it out until the mate, go ahead. Resigning is your choice, and your choice alone.
Just don't stall - if the mate is coming, move quickly.

I never even thought about it and it would surprise me if this is considered bad sportsmanship.
A win is a win.
The only thing that's poor sportsmanship is stalling. I usually prefer playing out the mate because it's rewarding, but if someone decides to resign before mate I wouldn't call it poor sportsmanship.
As several have already said, it's irrelevant to me too.
You shouldn't do something based on what others expect, but what you want while respecting the rules.
Getting checkmated or resigning a move earlier, what changes ? It is you who decides, not your opponent ( who wins in any case).
Quitting without resigning, or making the opponent wait indefinitely until the end is instead wrong, because it means not accepting defeat.
The only concrete gesture of sportsmanship, in my opinion, is to congratulate your opponent once you have lost. After the game is over, when I lose I always say "good job", or "Well played", or "well done".
For the rest, all that matters is correctness and respect for the rules accepted by everyone.
