So I felt like I was facing Caro-Kann a lot and I tried to learn how to deal with it watching some youtube vids. I will forget about it if I face it weeks down the road. So I thought I would try to face some guys with white today, but mostly got black and whenever I played e4 always something else would be the response. I now am seemingly flagged for sandbagging or something dumb, but I just want to genuinely play some games against the caro-kann. Dont care about ratings, but would also like to avoid non-rated matches as people quit immediately more or less im my experience.
Appreciate the help for a guy with poor memory, if the learned stuff is not applied.

Very simple to do on your own computer. Install scid vs pc, play against engine, and it will open an interface where you can set time control, select side to play and opening. Then the machine will always play the selected opening from either side. When you deviate from the book, it will tell you that the move is not in the book, do you still want to play it? I find it much simpler than setting up a position. You can even select variations in case of big openings like Sicilian.

An alternative to playing against the engine is to take your opponent moves from the lichess database, setting the rating range to whatever you think is appropriate.
