I'm not very experienced with Swiss but I'd say around 4-5, might not be 'optimal' as you say

I would say 5 to 7 rounds. You can go up to 8 or 9 if you want though.

Mostly, you just want to have one winner assuming that all rounds are decisive. The formula goes like this. Every round divide the number of participants by 2. If it is an odd number, round up. Repeat until you only have 1 left. That's how Swiss tournaments are usually done.
