I'm very new here, rated automatically by lichess to I don't know what anymore, but I'm certainly not the level I'm rated at. So, what can I do to grind through game after game of being shredded by players that are much, much better than I am? I struggle to solve the one-move captchas for posting, although I think they're a pretty neat idea.

don't despair, keep playing, you will get to the point where you are being matched against people of equal ability. Then you will win as many as you lose. Thats how it works.

Unfortunately if everyone could decide what rating they could start at some people would exploit this feature for malicious purposes, such as sandbagging.
Instead, everyone starts at the same rating and has the same rating deviation so that it's up to the system to assign players the closest number associated with players' skills.
Besides, you really can't know in advance what rating you should have since every site has a different rating system.

that would not lower his rating at all and he wouldnt know what his skill is either.

Suggestion.
In settings, display, turn off ratings. That way you’ll never worry about your opponents ratings as you can’t see them. Treat casual games as experimental.
In game settings, adjust the ratings bar to say, 900-1500 and in the game lobby, pick someone in the middle and go from there. After 20 or 30 rated games, your own rating will start to level out. The more rated games you play, the more accurate that number becomes.
You can adjust the rating range at any time, so if you are a beginner set the rating at its lowest point, 600 I think, and 1000 and then pick someone near the bottom as the system ranks low to high.
Don’t always play the lowest though and it’s generally better to play players around your own strength or better than you.
