I guess it is because most players like to play Bullet and Blitz due to shorter games and it takes a shorter time to improve your rating.

In classical games you have to spend a longer period of time, not only to complete your games, but also to improve your rating.

Bullet and Blitz are naturally more addictive, despite the fact that they do little to improve your playing ability. I achieved 2300+ in Bullet and 2270+ in Blitz, but I know in Classical I am only around 2000.

Longer time and longer brainstorming are the main reasons people avoid classical, especially if people are employed and have to go to work. Most people can't afford to spend many hours playing chess. Classical games are more energy draining and less addictive. You have to spend longer time thinking and waiting for your opponent to make the move.

Classical and Rapid are far more beneficial in improving your chess games. With Bullet and Blitz you can still improve your chess, but it will take many thousands of games before you improve more substantially.
