Only if you leave or abort games does it count. If you resign, you end the game as forcefully as if you play until checkmate. In other words, you complete the game. So in my understanding it counts as a "completed game" for you.

Typically I resign if I see I have no chance of making a comeback against an opponent. But, in terms of point loss, would letting them checkmate me be better? Basically, which outcome makes you lose less points?

If it is a draw, the player who was winning the game, loses points and you gain points if you were losing.
