Idk about this. There are already thousands or even millions of peolle trying to scholars mate and never learning anything. Also nothing about the fried liver seems simple to me

Definitely, your main weakness is not your openings, but your tactical blindness. But it's OK for a beginner. Just play, and after game analyze what happened, why you lost (and how you managed to win).

Simplest and best is to defend 1 e4 e5 and 1 d4 d5 as black and open 1 e4 as white.
