If we were so able to use emojis anywhere anytime, flairs won't feel special. Now, by eliminating them from the whole site, only flairs remain cool and colorful lol

If I'm correct, Lichess just removes non-ASCII characters in general to prevent any possible code injection attacks.

One could easily integrate emojis that are based on svg or images.
