no casuals at 700 rating blitz 5min

It feels like there are hardly any players who just play casually for fun. Every move I make gets immediately countered, and then I find myself facing forks and uncatchable pieces. Do I need to dive deep into books and private coaching to improve, or is it possible to break through this level without intense training?

Books are generally tricky. You normally have to have a computer or a physical board close by and go thoroughly through all the variations a book is trying to show to you. As a pretty bad but still dedicated chess player I personally like online tournaments with little prizes that are drawn at random very much. Seems like FIDE and some national federations are doing that sometimes.

There are many players who just "play much" and this is enough to get a decent online rating.
When I was a total beginner of chess 10+0 on chessbase was good to win a fair portion of anonymous online games with random highs and lows of the rating.
You might try to play longer games casually for fun but with more time to think to get a deeper understanding.

Longer games are always good because
1.) This is what most coaches tell you.
2.) No beginner plays decent bullet chess, so to improve at chess games with "too much" time are just better then games with "too little" time.

And yes, I do just play casually for fun, real deep analysis I only do when looking at composed chess problems or composing them myself.

If all you want is an inspirational "you'll be a GM", you came to the wrong place. You call it trolling, I call it honesty.

You're doing good when you learn the overkill mates ie: Queen & king vs king and rook & king vs king, so much that you can do them in your sleep

Plus checks captures and threats after every opponent move and BEFORE your move will bring you very far from 800. It's explained in this video.

Also play longer time controls to practice, you don't practice Musik at full speed and that's what you're attempting with only paying blitz and bullet.

Looking back at my records, I advised 36 of my 311 students to stop pursuing improvement and just enjoy chess as a game, due to the fact that they simply weren't capable of improvement. They simply couldn't grasp the idea of a basic tactic such as a cross-pin or a skewer, even though we'd worked together for (sometimes) more than half a year. This lead me to the brutal truth, that some people just can't improve at chess.

Look at the OP's ratings. Over the course of his 500 games they have stagnated and at times fallen. I did not mean "maybe you can prove me wrong" sarcastically, I genuinely believe the OP is unable to improve. It could be because they want to play casually as they have stated, in which case they shouldn't care about improvement that much. Forgive me if I sounded sarcastic and cruel earlier, but my intention was neither to insult nor to troll, it was to deliver the truth, no matter how cold it may be. And the truth won't change even if y'all call me a callous, cold-hearted sonofagun.

A) give up chess
B) try to improve but you likely won't so just enjoy chess.
