I always thought Anderssen's immortal game was a great example (and fun!) of an accepted double rook sacrifice. Definitely not the most accurate game, but definitely one of the most brilliant. :) https://es.lichess.org/vyMHodr8

Unfortunately, the position was already completely winning, whatever move you did, really, which makes sacrifices a lot less fun in my opinion. It was still a fun idea, though.
