If you don't want this to be a dry experience you gotta maximise the fun factor and even out the odds a little. So I'd go for bughouse with two all time greats and another fabulous Patzer like me. Here an example game with 'decent' players:

Some research is in order to find the right squad for this, unless you want to avoid funny banter. It is well known that Tal was one of the most relatable champs ever, besides being a genius. He's a must pick for me but I'm really hard pressed to come up with another one from the top of my head. I always like to think to think that Capablanca must have been a cool guy to hang out with and I have a strong feeling that Petrosian would be great for this too, if he could stand playing with Patzers. Spassky is also a no brainer, but out of the Classical Chess legends I'm only convinced that Tal might also enjoy what I could bring to that table. Music, drinks, etc...
If I have to come up with another pick fast I would like to nominate a legend from recent chess entertainment history instead. For second GM I'd go with Jan Gustaffson! It's rather obvious that it is easy to click with him, if you share some interests, and I cannot imagine that he wouldn't cherish that experience too.
There's an amateur spot left for a celebrity with an avid interest in the game, and this might be the hardest pick.
You know who was seen at the chess club during his school years, Keanu Reeves!? He'd be my top pick but I couldn't find evidence that he's still playing.
It is well known that Arnold Schwarzenegger is a big chess fan and he might like this a lot. Sharing a cigar and some drink with Tal is right up his alley, I just can't imagine him enjoying the childlike play of bughouse, could turn out great though.
Funnily enough, without further reflection I think I'd have to go with MoistCr1TiKaL!
With online personalities it's easier to imagine them in different settings and he checks all the boxes. He likes a good game, has the brains to pick up on some nuances of bughouse play and I have no doubts that he might treat everyone with the utmost respect. Only problem is that he is practically a chess beginner. Makes up for that with making me not the youngest or the weakest chess link in that setting, quick-witted humor and deadpan delivery also add more critical fluids to the mix.
So I'd go with a game of bughouse with Mikhail Tal AKA "The Magician from Riga", Jan Gustaffson AKA "The Great Hope from Gibraltar" and Charles White Jr. AKA "Big Moist".
It is well known that there isn't "one game of bughouse", so I'd propose an evening session at a location where drinking and smoking is still allowed. If Moist has a problem with that he will be replaced with Schwarzenegger in a heartbeat. Arnie might also want to help out with the horrendous liquor bill...
