Depends on what you like! If you like the clock helping decide games, then bullet is for you - but if you like spending more time on each move then play blitz :)

For beating higher rated opponents bullet is better, blitz is better for beating lower rated opponents.

Also, bullet is just playing on instinct and it's not great for lower rated players as it enforces bad habits in my opinion.

Blitz can produce decent games sometimes and learning opening theory is good with blitz as you can quickly play openings hundreds of times which will ultimately get stuck in your memory after playing it hundred times in succession.
