Everyone plays differently those who like pizza play the Italian
Bad joke
It depends on your question.
Of course, extremely theoretical openings that are often played in master level like Ruy Lopez, Sicilian Najdorf, Nimzo-Indian are considered as the best openings according to the engine.
However, there is a difference between best scoring openings and best openings according to the engine.
For example, Danish gambit for white, is a very practical opening while engine doesn't like it.
Its evaluation is -0.3, which is slightly better for black if both sides play perfect.
But the thing is, even in the highest level (1800 ~ 2500 Blitz ~ Classical databse) Danish scores extremely well for white
(https://lichess.org/opening/Danish_Gambit_Accepted)
So if you are not a 2700GM in a classical game, Danish gambit might be better for you in reality.
#1: The ones which score the best at over-the-board master games. Those are the most accurate results; they're played by people who bring out the true potential of every opening.

#3: There's nothing subjective about what the best openings are. You're confusing, 'what you're best at' with, 'what the best is.' In every game, there is a best strategy. Coin flips aren't 50 / 50, so a game like Chess won't be perfectly balanced, either.
I think the best opening from white is E4 and from black is E5
Engines choice is C4 from black E5
White plays openings black responds ,simple, what even is this question , play the opening you enjoy the most and reply to whatever white pieces play , this is inane question xxx
according to 5 mio database at chesstempo.com and only considering openings that were played at least 1000 times (otherwise I do not trust the stats):
white openings that have best performance are:
1.d4
1.c4
1.Nf3
black opening, their best performance depends on white openings :
1.e4 a6 and 1.e4 e5, but if you like a bit more winning chances (but therefore less drawing chances) then 1.e4 c5 or 1.e4 Nc6
1.d4 Nf6 or 1.d4 d5 or 1.d4 d6
1.c4 ... and black has a lot of almost equal replies, but a tad worse seems to be 1.c4 Nf6
1.Nf3 d5 or 1.Nf3 b6 or 1.Nf3 c5 are all good replies. Again 1.Nf3 Nf6 is considerably worse.
As white 1.Nf3 is best with almost always 2.c4 next, as black has less options and thus it is the least amount to learn. The often played moves ...g6 and ...Nf6 are not so good against 1.Nf3
and whenever black plays ...e6, one of the best white responses seems to be g2-g3 (always flank the bishop if black plays ...e6). when you look at the database, dont just look what happens right after g2-g3, but look 2-3 moves deeper, and you will see the performance for white (more wins) is climbing. Such stats you only get if black does ....e6 and white responds with g3.
Except you have clearly no idea how to interpret statistics.
According to Chessbase Megabase (49%), Hiarcs Masterbase (47%) AND also Lichess Masterbase (48%) 1.Nf3 g6 scored fine!
And of course 1...Nf6 is a good reply to 1.Nf3, it's even the most popular response. There are certain subvariations which scored badly but for example the 2.c4 b6 and 2.g3 b5 variations scored perfectly well so far.
