Anyone could beat stockfish. There is an algorithm for stockfish to glitch out once in a while, but is very rare against lvl 8
I have won (in my alt) against stockfish
As there is no good way for engines to simulate ratings, they blunder every so often. Since stockfish level 8's rating is supposed to be 3000 (stockfish's actual rating is 3550), stockfish has to make some mistakes. Sometimes stockfish will "lower" it's performance by making a blunder, which can be very subtle and positional, but could also be hanging the queen.
