I have the feeling the level of play is higher in lower time controls so these are likely to be most popular
Slower is better. I don't enjoy fast time controls because they make it much easier to blunder and to play worse, generally. I want to make *good* moves, and that's why I prefer rapid (15+10) or classical. Only reason I would play blitz would be to try new openings.
I don't consider anything below 1 1 or anything at or above 1 day per move chess. Which time control is better (the best) really depends upon the medium.

Bullet used to be my second favorite until recently but I think my mind and hand have gotten tired of time scrambles so I don't play it as much anymore.
For me, anything shorter than 1+0 bullet is just a time scramble for the whole game because I can't move or click my mouse fast enough to give myself time to think.
I feel like shorter time control gives people less ability to cheat. I suck but I have played 700s that have made perfect moves....So online chess I wouild go for blitz, irl rapid/classical
