essays are your interpetation on a topic. You should simply make the choice according to your own desires, where you have an opinon. There are several forms of essays also; so picking that first is an easy way to narrow it done. I make essays sometimes myself on cinema and film studies because I have my own interpertation of a movie and watch alot of them.
So chess is a good start if you play very much.

If you use for example a search engine.
You can type, in this case, Notre Dame fire.
But add extra key words to your search engine.
Words like study, science, analysis, engineering, safety, impact, retrospect and so on.
Depending on the angle of your essay, those words can be relevant.

I don't know what your angle is on this topic.
Are you writing about how it started?, or perhaps how it was put out? How it could have been prevented in different ways? What repercussions it had or continue to have, and so on.

So include key words, that's relevant to your essay.
You can also use advance search, to remove certain words from your search. Surely Notre Dame football is irrelevant to your study, as are restaurant, movie, travel etc.

Depending on your essay, and your time schedule, you can also write an email, explaining that you are doing a school essay, and send your questions to, for example, the fire department in Paris, a France newspaper covering the fire, the contractor responsible for rebuilding the church or the organisation responsible for the church.
Maybe they will reply you?, By either answering your questions, or help directing you to other sources for information?
