Some cheesemakers add annatto seed to their cheese because in the 1400s and 1500s, good cheese was yellow. But then, according to Vox Investigate Journalism, "Farmers used to skim cream off milk to make butter, losing the yellow color. They dyed the cheese yellow (using annatto seeds) to convince people it was the same."
Because the cheese reflects red and green light which we perceive as yellow.
