Why can't choose the colour , when create a game with "three-c." , "antichess" , "atomic" , "horde" and "racing slugs" variations ? ( . Only allows a random colour , so sad ... ;((

All those games start out with large advantages for the white pieces
If you played every single one as white objectively you would always be winning

I don't choose to play white often , i just want a perfect symmetry , not random .

I think the inherent advantage for one side is exactly the reason why you cannot pick a color, so that you get your equal color distribution. It seems that adding the option to pick your color would do the exact opposite of what you're trying to achieve?

The system don't give random , i wanted to try both games at every variation , but often it gives 3 times the same colour , but i want to change colour for 50% my games .

The system tries to even out any color imbalances. Two games is just too few games, and it simply cannot work (consider two players need to be paired, but but are due for a White game).
Give it a reasonable number of games, and you will most likely hover around even distribution.
I do see the point that one wants to play both sides at the very beginning, when one is new to the game... especially in unsymmetrical variants like Horde.

That suggests you don't understand randomness

I don't want randomness , prefer exact 50% of colours . Especially , at some variations just a few games .

Again, this simply cannot work without making it worse for other people (moving away from 50%) - with the alternative not matching against some other players at all.
And as soon as you allow to pick your color, some player will start to show much more games with one color. This could be corrected when they get auto-paired, but this time they have long streaks with the other color. Especially with unbalanced variation, this could be abused to trick yourself into some favorable colors in certain situations.
