I assume you're referring to interactive lessons. You can click the gear icon next to the chapter and select "Interactive lesson" for the analysis mode. After that it's pretty self explanatory.

And can I add more "puzzles" in this "chapter," or is each puzzle its own chapter?

You can click the preview button in the lower right. For people who aren't members of the study, it will be interactive for them when they open it and they won't have an option to edit it.

Each puzzle is it's own chapter. Also note that it will only accept one correct move for each position. If you want to allow more than one correct move, you can install the Lichess Tools browser extension (but note that anyone viewing your study will also need it installed for that to work correctly).
