While i can consistently beat Stockfish level 1 on this site in a classical game i could never beat Stockfish level 1 in offline mode in the Lichess android app.
Just to test my theory i made this site's Stockfish level 2(!) and the android app's offline Stockfish level 1 play two classical games against each other and the app won both of those games. (once as white, once as black)

Heh, I agree that offline AI level 1 seems more challenging than online AI level 1.

It's not just classical chess. Against the app's level 6 atomic AI I get trashed maybe 70% of the time, while against the online level 6 the score is reversed (unless I'm heavily tilted.) This observation comes after two months of unsuccessfully trying to consistently beat the offline version while commuting.
Any reason why this should be the case? Maybe the online engine thinks less than the offline one? (the move time feels a little shorter online than off.)

Everything happens for a reason, but I have no idea what it is.

Online runs on lichess servers, offline runs on your phone. The former is easier to calibrate than the latter.

I noticed that level 1 offline doesn't play very differently from level 5
