If a beginner had only one book to study chess from, what book would you recommend it be?

Assuming the beginner knows the rules and so forth, first book would almost surely be some kind of tactics book.
If he studies one book he will be a beginner after all. No matter which one. Chess is more praxis than theory.

So MFTL is nice or one of Rowson‘s books, but they are designed rather for advanced players. Or one of those tactics tomes like „Forcing Chess Moves“, there are hundreds available.

#1 never expressed an intention not to "praxis", but is asking which book to use to supplement practice and other training.

With the availability of free puzzles here on lichess, a book of generic tactical puzzles is probably an unwise choice.
It should be an endgame book. Averbakh essential chess endings , Capablanca on endgames, Fine Basic chess endings.
We are all different people. And it depends on the level already reached
One book may be the best for this guy, but an other one far better for this other guy.
I would recommand "the Chess guide improvement"(Dan Heisman)
Yasser Seirawan style is excellent, and depending on your level and knowledge, a book from his "Winning..." serie may be a good purchase.
In the other hand, any general learning book written by a master would be a good idea (for example :Chess fundamentals-Capablanca, Learn chess-Nunn, why not chess for dummies) because they are speaking of every part of the game.
As said above: try any aspect of chess.

Interesting for any1 < 2200: e.g. Max Euwe: that book about endgames with minor pieces, and endgames with mixed material.
Tactics all levels: Jacow Neistadt: Zauberwelt der Kombination.
I would have to go with Silman's "How to reassess your chess 4th ed." as I improved 200 points by only studying 1/3 of it.
@Yersinia_Pestis Why would you recommend a beginner a book about endgames when there is like a 5% chance he would even make it that far in a game.
Most important things for beginners to study are 2 things: Decent openings (so his position won't be lost after 10 moves) and tactics (tactics are here and there and everywhere)
