I find it quite entertaining and often do well in the Daily bullet at lichess. It is a bit of a thrill really and part of the thrill is also just winning on time to be honest!. This is a skill in itself as you have to try and work out the probability of survival or how easy it is to do “short-moves” i.e. don’t take too long to physically play on the screen sometimes, or how to keep trying to check the opponent to interfere with their premoves. The clock becomes a massive part of the game, and you can also play more positively with low expectations of accurate defense etc.
Basically it is like an arcade version of chess, and I used to love Arcade games on my Atari etc back in the day.
Also it is the easiest to police for engine cheating from a server point of view than any longer time limit. There are many titled bullet tournament running everyday on lichess and they used bullet chess as the time control.
