Reach your preferences page (http://fr.lichess.org/account/preferences) and to enable it. You can do it while playing a game, your play interface will reload.

Are the blindfold ratings separated from the regular ones?

WOW. I swear I was to post a request for this feature ,really amazing ,this site is growing fast with many many things to come !

Blindfold is only a user preference. It doesn't affect rating in any way. You won't even know if your opponent is using blindfold mode.
This is all intended and not subject to change.

yes You can turn on the pieces in the middle of the game,
I just did in the 8th move and it works.

It would be awesome if blindfold chess is a variant...

I agree with coachlam, it would be great if you'd know that your opponent is also playing blindfold. That would really be a cool mode.
