You really complain about a difference of 300 points only? I would be glad if the differences were that small - I already experienced tournaments where many of my opponents where 800, 900 or even 1000 points better than me. (But most of them, if possible, use berserk then, so it is not so bad.)
I think, if the difference is 300 points you have a realistic chance to win - and even if you loose, you can learn from these games, much more than from winning against someone who is weaker than you in playing chess. If your opponent has 1000 points more, the game might end after five - ten moves - you cannot learn anything from such a game, too.

Tournaments pair people based on how many points they have. High-level players who join late will have very few points, and will get paired with other people with few points.
Count it as a learning experience. Those guys are going to show you your weaknesses very, very quickly.

People often do not have the possibility to choose the "right" tournament, as they have to work or other duties - for example, I am a quite weak player, but often I had no possibility to take part on a <1300-tournament I would have preferred. So I take the tournaments I can get :-)

But you still lose rating and its no fun if you keep on losing rating and you can't win.

You learn but your morale goes down and especially in bullet games they make hard moves that make you think like 1.e4 e5 2. nf3 nc6 and then you lose time so I reccomend that you do classical and rapid in open tournaments rather than bullet and lose to someone 500 rating above you.
