Vinland Saga is a nice start, the lore is easy to understand, and it's about Vikings, so even if it isn't so much historically accurate, it remain to be a nice anime.
I dont recommend to start with a classic like One Piece or SNK, because the story and all the characters arc are very, very long to understand and you'll get lost very fast.
If you want something more "mature" you can watch Cowboy Bebop, which is a real masterpiece, and also one of my favorite is "The Cockpit" by Leiji Matsumoto
