My opinion: Italian cuisine.

Mexico has a lot of variety.
If the food is wrapped in a tortilla, its a burrito.
If the tortilla its wrapped but not fully, its a taco.
If you have cheese inside the tortilla its a quezadilla.
If the cheese is on top of the wrapped food its an enchilada.
If the tortilla is fried and you put food on top, its a tostada.
If you put eggs on top of the fried tortilla instead, its mexican style eggs (huevos a la mexicana).
But jokes aside. There is a lot of variety because we have a country with lots of natural resources and an ancient culture.
