The setting to accept seeks from other players within a rating range of +-500 does not seem to look at the variant.
So if lets say a player would be 2800 in bullet and seeks a horde game where he is rated lower, and a little zerg wants to challenge this great player with another time setting cause the zerg is to slow, it is not possible even if the horde rating is within the +-500 range.

I've brought this up before and got no responses
I completely agree that it should be changed
My recommendation:
Upon challenging, bring up a box which shows the variants in which the player is within 500 rating points of the challenger. Click one of them to bring up the challenge box.
Alternatively:
Just remove the ineligible variants from the drop down menu

Nice Idea. Variants where the player to be challenged is still 1500? should be also excluded cause most likely he does not want to accept such a game.

What about casual players though?

Right.
But I guess the reason why this setting only looks at the best rating (at least I assume it does) is that this players who choose to only play within their rating range can not be annoyed by challenges in other variants they actually do not want to play at all.

Good point
I guess the ideal solution would include being able to select which variants you want to be challenged in
From a design point of view, I understand the desire for simplicity - especially in a growing website, but perhaps it is time for Lichess to consider implementing advanced options even if they are hidden away
