Blitz is literally "lightning", but here a fire icon is used.

pretty sure the devs are aware. but it's just a symbol. there's no need to read it literally, especially since most people have no idea about the german meaning of blitz.

At least Germans and Soviets/Russians (everybody knows "blitzkrieg" from school) knows the meaning. That's a lot, I think.
Btw, chess.com uses a lightning icon for blitz, so it would be more consistent for people who plays at both sites.

because arguably there is nothing broken, and thus nothing to fix. people are used to the icon. there is no inherent reason why the icon has to correspond to the german meaning of the word. i am saying this as a german speaker myself.

It's just about consistency and expectation
To be more specific than #2. For a long time, bullet icon used to be a lightning, and blitz a fire. A few years ago the bullet icon was changed to a bullet, but it was decided not to change the blitz icon at the same time, not to confuse players.
Nowadays the cooldown period has probably been long enough to change the blitz icon to a lightning, but at the same time it's low priority and will cause uproar.

The big question is, why is the rapid icon not a picture of a fast flowing river?
