From my understanding (I may be wrong), it's just that the new puzzles feature "reset" your scoring. So it takes around 12 puzzles to set your "base score" (again), exactly like when you registered and started doing puzzles for the first time. You can see during this "reset" phase that you have a question mark near your score. Once you have done about 12 puzzles with the new system, your score doesn't swing that much anymore.
Getting infinite rating from mates in 1 works (assuming you never get one wrong) ... it just takes way too long bc you'll need more and more mates to just gain one single point ... but if someone wants to spend time like that, nobody's stopping them ...
