You need different plants to beat players from 1800 - 2000, 2000 - 2200, and 2200 - 2400 and 2400 - 2600 (which includes 2500 too).
Some of them:

- Put your opponent in traps and get them into a puzzle situation.
- Gain an advantage. (This refers to both positional and material)
- Creating an opening repertoire and practicing it again and again.
- Analyzing the games, doing puzzles (so as to store the puzzle, and remembering it gets the opponent dead), having a good rest, and a clean, positive mind.
- Deep in my mind, the best plan comes to be calculating as much as you can, like what would the opponent do if I do this, that.
- Make them mad, scream at you for following the above sequence.
- Last, but not least, checkmate them!

And different openings might make a difference too.

But how? They don't seem to make mistakes at ALL. Every move I can think of after the opening is a mistake/bad/unnecessary move. And I'm talking about 1800+ in classical mainly and maybe rapid not in blitz or bullet.
1700 and 1800: just play solid and wait huge blunders.

In my games I make more blunders than them. I can't punish 1700 and 1800 mistakes. 1700 or 1800 in CLASSICAL, not blitz, bullet or ultra.
