This is indeed a very interesting topic. I have to say I have never seen anything like it -- over the board or online. This seems like one of those endings that is very difficult to play with either side! Practically speaking, though, if the winning side is able to achieve Rook vs. Knight, that can sometimes be tricky to hold for the side with the Knight (though it is objectively a draw). My advice is try to avoid these types of endings as best as you can, as keeping pawns on the board can make your winning task easier! Of course, this is not always possible, but just something to keep in the back of your mind.
