New Variant: Perfect Endgame Chess

Perfect Endgame Chess is regular chess except whenever a game reaches an n-piece endgame, the game ends according to its theoretical result. Currently there are tablebases for every position with up to seven pieces, so I suggest Perfect 7-Piece Endgame Chess.

*Inspiration*

Yesterday a series of ultrabullet games were played between top players GM penguingim1 (#2) and IM Satranc_Youtube (then #4) (lichess.org/player/top/200/ultraBullet). penguingim1 complained that he was unable to gain rating points against Satranc_Youtube even though he was achieving superior positions in nearly every game. This is because Satranc_Youtube was extremely fast and able to flag penguingim1 in several losing endgames. I agree with penguingim1 that this current ultrabullet meta is undesireable.

The Perfect Endgame variant would fix the problems with the currently ultrabullet meta. It would improve the incentives to make high quality moves in bullet and blitz time controls as well. In general, there would be fewer tricks and less flagging, yet players would still need to play quickly to win.

I just lost an endgame that was a theoretical draw. Playing this variant I could learn to get to know better what pawn structures are drawn and which can be won.
Except you wouldn't learn because you wouldn't be playing the positions out.
So if you are up a pawn in a rook endgame but with perfect play your opponent can achieve a draw, then based on the table base it is an automatic draw?

Perfect endgame chess kind of defeats the purpose of learning endgame strategies and takes the endgame out of the match entirely.

I get your point about dirty flags, but IMO time is a part of the game and if you are playing a fast game, then you have to accept that you have to play the entire game quickly.
In ICCF correspondence this is already in place.
I would be way more interested in the opposite of this; tournaments/variants where you can practice these theoretical endgames. I think it would be a great way to practice them.

To add onto the discussion here; isn't the point of ultrabullet that you need to be fast? So if you cut out the endgame part, speed becomes less important and people will be mad that they lose equal or superior midgame positions bwcaus they get flagged.
#6 You still need many moves before you reach a 7 men endgame.
