How can lichess tell im not using an engine

Their engine-detection software checks to see if a player's moves (and move times) are uncannily similar to the principal variation popular chess engines would use in a game. Unless you frequently play like a computer, you shouldn't need to worry: github.com/clarkerubber/irwin
Having a 0/0/0 score does not necessarily mean you played a good game, it could also mean that your opponent played bad moves and you refuted them accurately.

1. f3 e5 2. g4 Qh4#

That's would be an example of perfect play by a player (in this case black.)
