I play d4 so I don't know if Italian is white's opening or black's
If it's white's opening then you can play d4 or c4(or Nf3)
If it's black's opening then you can play something else like sicilian or carokann

Most grandmasters nowadays prefer 1 e4 e5 2 Nf3 Nc6 3 Bc4 Bc5

I second #9.Finally someone mentions giuoco piano!IMO, its by far the best response. Petrov is indeed very annoying for Italian players.
