If you won only because your opponent didn't move, then it is a win for the tournament, but you don't get rating, because such games don't tell anything about your level of play.
Could you share the two rated games you're speaking of?

sheckley is correct; your opponents didn't play any moves, which is technically a win in the tournament but no actual gameplay was made, so your rating didn't change
Yes and in a quick pairing game the time wouldn't have started running so there's no way for them to timeout.
